Short Description

We’ve been exclusively engaged by a leading luxury resort group to find a rare culinary leader—a Head Chef who can elevate resort dining through creative modern Australian cuisine, commercial acumen, and deep partnerships with the region’s premier suppliers and wineries. The resort is a regional resort in New South Wales.

  • Regional Resort & Winery Fusion: Craft menus that complement on-site resort experiences (fine-dining restaurant, poolside grill, banquet events) and partner with neighbouring vineyards.
  • Leadership Spotlight: Perfect for a Senior Sous or Sous Chef ready to own multiple outlets, inspire a brigade of 12-15 and become the culinary ambassador of a world-class regional retreat.
  • Guest-Centric Creativity: Design signature tasting events, vineyard dinners and bespoke in-villa dining experiences that showcase local terroir.

Three Key Priorities 
  1. Culinary Innovation Across Outlets
    • Focus on overseeing menu development for a fine-dining restaurant, poolside bar and in-room. —ensuring consistency, quality and a true sense of place.
    • Integrate wine-pairing elements sourced through the resort’s cellar-door partnerships. 
  2. Commercial & Systems Excellence
    • Own P&L performance across all F&B outlets: food cost, labour budget and inventory management.
    • Utilise kitchen management systems (inventory, rostering, recipe-cost software).
  3. Team Leadership & Regional Engagement
    • Lead, mentor and develop a diverse culinary team, including apprentices and sous chefs.
    • Forge strategic partnerships with top regional wineries—co-create tasting menus, host vineyard tours and guest masterclasses.

Your Role & Team
  • Multi-Outlet Oversight: Manage a signature restaurant, poolside bar, breakfast buffet and Inroom.
  • Modern Infrastructure: State-of-the-art cold-room facilities, integrated POS and kitchen management software.
  • Collaborative Environment: Good people and good energy in the business

Who You Are Must-Have
  • Senior Sous or Sous Chef with 5+ years in multi-outlet kitchens (resort, hotel or destination restaurant).
  • Proven ability to manage costs, P&L and kitchen systems (e.g digital rostering).
  • Creative vision with strong organisational and leadership skills.
