Three Key Priorities - Culinary Innovation Across Outlets
- Focus on overseeing menu development for a fine-dining restaurant, poolside bar and in-room. —ensuring consistency, quality and a true sense of place.
- Integrate wine-pairing elements sourced through the resort’s cellar-door partnerships.
- Commercial & Systems Excellence
- Own P&L performance across all F&B outlets: food cost, labour budget and inventory management.
- Utilise kitchen management systems (inventory, rostering, recipe-cost software).
- Team Leadership & Regional Engagement
- Lead, mentor and develop a diverse culinary team, including apprentices and sous chefs.
- Forge strategic partnerships with top regional wineries—co-create tasting menus, host vineyard tours and guest masterclasses.

Who You Are Must-Have
- Senior Sous or Sous Chef with 5+ years in multi-outlet kitchens (resort, hotel or destination restaurant).
- Proven ability to manage costs, P&L and kitchen systems (e.g digital rostering).
- Creative vision with strong organisational and leadership skills.
