Pastry Chef – Croissant & Viennoiserie Specialist Location: Brisbane, QLDPosition: Full-TimeSalary: $75,000–$85,000 per year (depending on experience) We are looking for a passionate and highly skilled Pastry Chef specialising in croissants and laminated doughs to join our growing wholesale bakery. This role is ideal for someone who takes pride in producing premium-quality viennoiserie and enjoys working in a fast-paced, high-volume environment. About the Role You will be responsible for producing a wide range of laminated pastries, including:
  • Croissants
  • Pain au Chocolat
  • Danish pastries
  • Cinnamon Scrolls
  • Pain aux Raisins
  • Seasonal and specialty viennoiserie

You will be involved in the complete production process, including:
  • Dough mixing
  • Lamination
  • Sheeting
  • Cutting and shaping
  • Proofing
  • Baking
  • Maintaining consistency and high-quality standards

What We’re Looking For
  • Minimum 3 years’ experience producing croissants and laminated pastries.
  • Strong knowledge of dough development, fermentation and butter lamination.
  • Ability to work efficiently in a high-volume production bakery.
  • High attention to detail and pride in producing exceptional products.
  • Reliable, organised and able to work independently.
  • Positive attitude and strong work ethic.
