Sogno Italiano is a busy Italian restaurant environment in Burleigh Waters, with lunch and dinner trade, focusing on dine-in service as well as bookings, takeaway/order flow and larger group/banquet service. We have a team-based kitchen operation requiring close coordination between chefs, kitchen hands and front-of-house staff, with strong weekend, evening and public holiday service demands. We are seeking a passionate chef with at least one to two years hands-on experience in Italian cuisine, ideally in a restaurant offering pizza, pasta, seafood and classic Italian mains. Must be confident with fast-paced a la carte service, quality control of premium ingredients, gluten free/dietary adjustments, and teamwork across kitchen and floor operations. Experience with authentic or modern Italian menu execution is strongly preferred. Further essential qualities:
  • Formal qualification in Commercial Cookery (Certificate IV or higher).
  • Strong knowledge of cooking techniques, ingredients, and kitchen equipment.

Duties and Responsibilities:
  • Prepare and cook authentic Italian dishes across antipasti, house-made gluten free gnocchi, risotto, pasta, pizza and main-course sections in line with Sogno Italiano's menu and service standards.
  • Execute pizza service for both Rosso and Bianca pizzas, including Margherita, Diavola, Pescatore, Quattro Carne, Quattro Formaggi, Funghi, Ragazzi and Puttanesca, ensuring correct topping balance, bake, texture and presentation from the pizza oven.
  • Prepare and finish fresh pasta and gnocchi dishes such as Pappardelle Ragu, Rigatoni Salsiccia, Rigatoni Boscaiola, Ravioli, Linguini Gamberi, Spaghetti Pescatore, Carbonara, Bolognese and Napoli-based dishes with consistency during busy lunch and dinner service.
  • Cook seafood-focused dishes including garlic prawns, calamari fritti, scallops, risotto marinara, linguini Moreton Bay Bug and zuppa di pesce, with close attention to freshness, timing and correct doneness of shellfish and fish.
  • Prepare core sauces, garnishes and accompaniments used throughout the menu, including Napoli, pesto, funghi, piccante, saltimbocca, bisque, truffle aioli, salsa verde, limoncello butter/white wine sauces and other house-style components.
  • Check the quality, freshness and storage condition of key ingredients including burrata, buffalo mozzarella, prosciutto di Parma, pancetta, salami, pork sausage, olives, herbs, seasonal vegetables, seafood and other imported or premium Italian products.
  • Plan mise en place, portioning and prep levels for regular service, takeaway/orders, banquet groups and peak weekend/public holiday trade, while minimising wastage and maintaining food cost control.
  • Ensure all food handling, labelling, storage, stock rotation and kitchen sanitation procedures comply with food safety requirements, especially for seafood, dairy, cooked meats, sauces and gluten free items.
  • Adjust dishes where required for gluten free, vegetarian, vegan and allergy-related requests while protecting flavour profile, presentation and cross-contamination controls.
  • Work closely with front-of-house staff and management on dockets, timing, specials, customer feedback, stock needs and smooth service flow; assist with training and supervising junior kitchen staff.
  • Complete opening and closing kitchen procedures, record wastage, monitor prep lists and maintain a clean, organised and service-ready kitchen at all times.

A salary of $76,000 - $80,000 will be offered to the successful candidate.
