The Cambridge Hotel / Cessnock Hotel) is seeking a skilled and motivated
Chef de Partie to join our professional
kitchen teams on a full-time basis. We operate a bar, bistro, gaming facilities, and accommodation seven days a week, with peak trading periods during weekends, major Hunter Valley events, and school holidays.
Our facilities include: - Dining: A bistro open seven days a week, offering pub classics such as steaks, schnitzels, and seasonal menu items
- Accommodation: Refurbished, air-conditioned rooms with shared amenities and continental breakfast
- Entertainment: Bar facilities including pool tables and dartboards
We pride ourselves on delivering high-quality meals to locals, mine workers, and visitors. Due to continued business growth, we are expanding our kitchen team.
Position Overview The Chef de Partie will work closely with the Head Chef, Sous Chef, and senior kitchen staff to support daily kitchen operations, maintain food quality standards, and contribute to efficient service delivery. The successful candidate will demonstrate strong technical cooking skills, excellent time management, and experience in high-volume service environments.
Key Responsibilities - Assist with food preparation, cooking, and service in accordance with menu specifications
- Support the Head Chef and Sous Chef with menu planning, development, and execution
- Prepare and present dishes to a consistently high standard within required timeframes
- Supervise, train, and mentor junior kitchen staff
- Ensure compliance with food safety, HACCP, and WHS regulations
- Manage stock control, ordering, inventory, waste reduction, and stock rotation
- Lead kitchen operations during peak service periods and in the absence of senior chefs
Qualifications & Experience - Certificate IV in Commercial Cookery and Diploma of Hospitality Management
- Minimum of two (2) years’ experience as a chef in a commercial kitchen
- Experience in an Australian pub, hotel, or casual dining environment (preferred)
- Proven ability to work efficiently in a fast-paced, high-volume kitchen
- Strong communication, teamwork, and leadership skills
- Flexibility to work a rotating roster, including weekends, evenings, and public holidays
Salary & Benefits - Salary range: AUD $78,000 – $82,000 per annum + superannuation
