About UsGood Cartel is a high-volume cafe in Broome, Western Australia, known for our house-made pastries, artisan bread, pies, and all-day food menu. We're a bakery-driven cafe — from artisan baguettes to house-made laminated pastries — and our Bake Shop department is growing.
The RoleYou'll be joining our existing team of 3 in our Bake Shop department. The Bake Shop drives the cafe — croissants, danishes and other viennoiserie, baguettes and bread lines, house-made pies, and batch-cooked fillings — and as demand grows we're expanding the department to match.
This is a senior, hands-on baker's role with real pastry skills — production plus room to create. On any given day you'll be:

• Dough preparation, proofing, and baking — pastries, baguettes, focaccia, and other bread lines
• Preparing pastry creams and other fillings from scratch
• Decorating and finishing pastries — the final product on the counter is yours
• Developing flavour profiles — contributing new ideas to the range as the department grows
• Batch cooking and prep to support the wider production schedule

What We're Looking For

• A baker with genuine pastry skills — demonstrated experience across dough prep, proofing, and baking of both breads and pastries
• Skilled in pastry creams, decorating, and finishing to a counter-ready standard
• Creative flair — we want someone who brings ideas and can develop flavour profiles, not just follow recipes
• Comfortable with early starts and the physical demands of a production kitchen
• Consistent at volume — precise, organised, and clean
• A genuine interest in quality — we make everything from scratch and that matters to us
