The Role:We are seeking a highly experienced and dedicated
South Indian Coastal Cuisine Chef to spearhead our kitchen operations. This is a pivotal role for someone who is not just a cook, but a true culinary artist and a guardian of traditional recipes from these regions. You will be responsible for developing, standardizing, and consistently executing a menu that celebrates the diverse culinary heritage of Mangalore and/or Kerala, ensuring every dish maintains its authentic flavour profile and travels exceptionally well for delivery.
Key Responsibilities:- Menu Development & Standardization: Research, develop, and refine an authentic menu that showcases a range of traditional Mangalorean and/or Kerala dishes, suitable for a cloud kitchen model (e.g., dishes that hold well for delivery, optimal portioning).
- Authentic Recipe Execution: Lead all food preparation and cooking, ensuring strict adherence to authentic regional recipes, traditional cooking methods, and precise flavour profiles.
- Ingredient Sourcing & Management: Identify and source high-quality, authentic ingredients specific to coastal South Indian cuisine (e.g., unique spices, specific types of coconut, regional seafood). Manage inventory, minimize waste, and control food costs without compromising quality.
- Quality Control: Maintain the highest standards of food quality, taste, freshness, and presentation for every dish prepared for delivery.
- Cloud Kitchen Efficiency: Optimize kitchen workflow, implement efficient batch cooking methods, and manage production to meet delivery demands during peak hours.
- Hygiene & Food Safety: Uphold impeccable kitchen hygiene and strictly adhere to all Australian food safety and sanitation regulations (HACCP principles).
- Team Collaboration: Potentially train and mentor junior kitchen staff in South Indian coastal cooking techniques and best practices.
- Innovation: While maintaining authenticity, explore innovative approaches to presentation or subtle adaptations for the cloud kitchen format that enhance the customer experience.
What We're Looking For:- Proven experience as a Chef with a demonstrable specialization in authentic Mangalorean cuisine OR a strong background in authentic Kerala (Malabar/Coastal) cuisine. This regional expertise is paramount.
- In-depth knowledge of the specific spices, ingredients, traditional cooking methods (e.g., extensive use of coconut, red chillies, tamarind, kudampuli), and iconic dishes from these coastal regions.
- Experience working in a high-volume kitchen, preferably a cloud kitchen or delivery-focused establishment, is highly regarded.
- Strong understanding of food cost management, inventory control, and waste reduction.
- Exceptional leadership, communication, and interpersonal skills.
- Ability to work efficiently under pressure in a fast-paced, dynamic environment.
- Unwavering commitment to food quality, hygiene, and safety standards.
- Passion for sharing and promoting the rich culinary heritage of South India's coast.
- Relevant culinary qualifications and certifications in food handling/safety.
- Valid working rights in Australia.
