Role OverviewWe are seeking an experienced and passionate
Keralan/Indian Cuisine Chef to join our kitchen team. The ideal candidate will have strong knowledge of traditional Kerala cooking techniques and the ability to consistently deliver authentic, high-quality dishes.
Key Responsibilities- Prepare and cook a variety of authentic Keralan dishes including curries, seafood, tandoor items, and traditional breakfast items (e.g. appam, idiappam, puttu).
- Maintain consistency in taste, presentation, and portioning across all dishes.
- Manage mise en place and ensure efficient kitchen operations during service.
- Monitor stock levels, minimise waste, and assist with ordering ingredients.
- Ensure compliance with food safety and hygiene standards (HACCP).
- Train and support junior kitchen staff where required.
- Contribute to menu development, including seasonal specials.
Requirements- Proven experience as a chef specialising in Keralan or South Indian cuisine.
- Strong knowledge of spices, flavour profiles, and traditional cooking methods.
- Ability to work in a fast-paced kitchen environment.
- Good understanding of food safety regulations.
- Team player with strong communication skills.
- Flexibility to work evenings, weekends, and holidays.
Desirable Skills- Experience with tandoori cooking.
- Knowledge of seafood preparation (a key part of Keralan cuisine).
- Previous experience in UK restaurant kitchens.
