Job Title: Bistro & Functions Manager Position Type: Full-Time Location: The Emerald Hotel South Melbourne About the Role We are on the hunt for a passionate, dynamic Bistro & Functions Manager for our well-established venue. We are looking for a true leader to take an existing role and make it their own. You’ll inherit a strong foundation, a loyal customer base, and a dedicated team. What you bring is your unique operational flair, service vision, and event management skills to drive both day-to-day floor service and our growing functions business. Key Responsibilities

• Floor Leadership: Lead, mentor, and motivate the front-of-house team. Oversee daily floor operations to ensure seamless service and exceptional guest experiences.
• Function & Event Coordination: Act as the primary contact for all function inquiries—handling quotes, site visits, menu selections, runsheets, and executing events on the day (from intimate private dinners to large group bookings).
• Kitchen & FOH Synergy: Partner closely with the Head Chef to design seasonal function menus, coordinate dietary requirements, and ensure flawless kitchen-to-floor communication during events.

What We’re Looking For

• Proven Experience: 2+ years of management experience in a fast-paced bistro, pub, or restaurant, including hands-on experience managing private dining, functions, or events.
• Event Savvy: Outstanding organization skills, strong attention to detail, and a flair for creating unforgettable event experiences.
• Hands-On Leadership: A leader who thrives on the floor during peak service and leads by example during high-stakes function execution.
• Creative Initiative: Someone who sees opportunities to grow the function portfolio and take full ownership of marketing/upselling the venue space.
• Business Acumen: Understanding of hospitality KPIs (labor percentages, function profit margins) and experience with booking/POS software.
