KITCHEN MANAGER / HEAD CHEF - FULL TIME Location: Fins & Ribs, Manly Beach, NSW Fins & Ribs is a busy beachfront restaurant in the heart of Manly, serving quality seafood, ribs, steaks, burgers, pasta and seasonal specials. We are looking for an experienced Kitchen Manager / Head Chef to lead our kitchen team and maintain the high standards our customers expect. This role is ideal for someone who enjoys leading a team, managing kitchen operations and delivering consistent, high-quality food in a fast-paced environment. Key Responsibilities Oversee the day-to-day operation of the kitchen. Lead, train and supervise the kitchen team. Ensure consistent preparation and presentation of seafood, fish and chips, oysters, prawns, ribs, steaks, burgers, pasta, schnitzels, salads, starters, desserts and seasonal specials. Maintain recipe consistency, portion control and plating standards. Ensure premium seafood and meat products are stored, handled and prepared to food safety standards. Manage kitchen workflow during busy service periods while maintaining speed, quality and organisation. Plan daily prep lists and coordinate kitchen production. Manage stock ordering, inventory, supplier deliveries and stock rotation. Monitor food costs, minimise waste and maintain profitable kitchen operations. Work with management to develop seasonal specials, menu improvements and function menus. Maintain a clean, organised and efficient kitchen. Ensure compliance with food safety, hygiene and workplace health and safety regulations. Assist with recruitment, training, rostering and performance management of kitchen staff. Work closely with restaurant management to improve kitchen performance and customer satisfaction. About You Minimum 3 years experience as a Head Chef, Kitchen Manager or Senior Sous Chef. Strong leadership and communication skills. Excellent knowledge of kitchen operations, food costing and stock control. Experience working in busy restaurants with high service standards. Calm under pressure with excellent organisational skills. Passionate about producing quality food and leading a positive team culture. Available to work weekends, evenings and public holidays.
